Yummy Fluffy Keto Waffles Recipe

When you think breakfast, brunch or a dessert; waffles crosses one’s mind for more than one occasion! For me, Sunday brunches with Lotte are a must-do ritual, where we spend quite some time to whip up an amazing brunch, enjoy what we just made and while away a few hours just talking to each other. Dreamy stuff, I know! The one thing I found we almost always made was pancakes or waffles! So after several weeks of making them, iterating, getting feedback from some of our amazing readers and followers, I am happy to share this final recipe for some fluffy keto waffles.

Preparation time: 15 minutes

Baking time: 10-15 minutes

How to make these keto waffles

For 4-8 servings depending on the size of the waffle maker

Baking equipment needed

  • Waffle machine

  • Whisk / blender

  • Ladle

  • Fork

  • Two plates

Ingredients

(For the Dutchies: of some ingredients you can find a link to Body & Fitshop to purchase them)

  • 4 large eggs at room temperature

  • 110 grams cream cheese at room temperature

  • 75 grams almond flour

  • 15 grams coconut flour

  • 60 ml cream

  • 2 tablespoon melted coconut oil or melted unsalted butter

  • 1.5 teaspoon baking powder

  • 1.5 tablespoon erythritol (if you have a sweet tooth like, then make this 2 tablespoon)

  • 1 teaspoon vanilla essence

  • A pinch of salt

Sweet toppings (optional)

  • Strawberries

  • Blueberries

  • Homemade keto jam

  • Homemade keto whipped cream

Savoury toppings (optional)

  • Poached egg with dill, salt, and pepper

  • Smoked salmon with dill

  • Omelet

Instructions

  1. Add all ingredients to a blender/bowl and blend/whisk until smooth. The consistency should be semi-thick fluid i.e. you should be able to pour it easily into the waffle griddle. If you think your batter is too watery (mostly it should not be, but egg sizes can vary), add a tablespoon or two of of almond to thicken it up.

  2. Switch on your waffle maker. Pour batter into a preheated, lightly greased waffle maker and bake until it's done, depending on how your waffle maker works (you might just have a red and green light, or might have a temperature setting on it).

  3. When done, lift the waffle off the grid with a fork. Put it on a plate(preferably a deep one and cover with the other plate, this will help keep your waffles warm until all of them are done and you can eat them in one go).

  4. Lightly grease the griddle again and repeat to make the next batch.

  5. Add your choice of toppings and enjoy your well-deseverd Sunday brunch :)
