Cauliflower Mac and Cheese Recipe Please!

This cauliflower mac and cheese recipe is a perfect combination of creaminess and crispiness, and is without doubt one of Lotte’s favourite keto dinner recipes. All my guests have loved it so far. In addition, this dish is ready within 15 minutes and provides you with 300 grams of vegetables per serving. Cauliflower is a low-carb vegetable that can be used in so many different recipes. Ingredients for 2 servings of this keto cauliflower mac and cheese

  • 600 grams frozen cauliflower heads

  • 100 millilitres unsweetened cream

  • 100 grams cream cheese

  • 75 grams cheddar cheese

  • 1 tablespoon mustard (mayonnaise)

  • As much spices as you like: turmeric, curry powder, cayenne pepper, bell pepper herb, garlic powder

  • 2 eggs

  • Optional: bacon


How to make this keto mac and cheese

  1. Boil the eggs the way you like them.

  2. While the eggs are boiling, cook the cauliflower according to the package.

  3. Mix the cream cheese and unsweetened cream in a pan on low fire with a whisk.

  4. Shred the cheddar cheese and stir 50 grams in the mix.

  5. Add the mustard mayonnaise, turmeric, cayenne pepper, bell pepper and garlic powder until a smooth yellow cream develops.

  6. If the cauliflower is well-cooked and drained, mix it gradually into the creamy sauce.

  7. Divide the cauliflower mac and cheese over two plates and top it off with the rest of the cheddar cheese and a sliced egg.

  8. If you eat meat, you can optionally add some bacon to your dish!
